Everybody loves Halloween. You get to dress up, eat sweets and carve pumpkins. It’s like being a child again but totally acceptable.
Surely though, we can make Halloween a little more adult like by making some delicious food using the leftovers from the pumpkin that has been sat outside your front door, scaring children all night.
I suggest throwing a Halloween dinner party for a bunch of friends. Get everyone to dress up, decorate the house and make a feast that everyone would drop their candy buckets for.
First of all, Pumpkin Soup:
Get all creative and make a Pumpkin Seed Bread to serve alongside it if you want to. Then for main you should serve up a delicious Pumpkin Risotto. And for dessert? A Cinnamon Pumpkin Pie would be divine, don’t you think?
So nobody goes home empty handed, make them all a Cream Filled Pumpkin Cupcake, at least then their candy buckets will be looking devilishly delicious.
I have to say, that after making this soup, I was surprised at how tasty it really was! It has become my new favourite and now a family tradition for every halloween…we have it with croutons on top instead of seeds, so give that a try too if you have the chance.
Want a fun way to serve it? Buy small pumpkins, cut the top off, scoop everything out and pour the soup into them.
